Today we are talk on recipe of  rajasthani sweet : Besan ki chakki

Barfi, Barfi or Gram flour, Indian Sweets,
Introduction
     It is a Rajasthani Sweet dish which made with besan, sugar, and Ghee. It is very famous during all Rajasthani Festival or Events like Weddings, Parities, Ceremony, Deepawali, and Holi so on.


Preparation
     Prepare all besan with perfect size and melt whole butter.

Ingredient                                                      Quantity
1. Gram flour (Besan)                                         1kg
2. Sugar                                                               1kg
3. Clarified Butter (Ghee)                                  850gm
4. Green Cardamom Powder                          as required 
5. Dry Fruits                                                 for garnishing
    (Almonds,
     Cashew,
     Pistachio)

Method
1. Melt ghee in a thick bottom pan.
2. Take 100 gm ghee and mix into whole besan.
3. Shortening (rub) besan and ghee with hand for removing lumps.
4. Heat 750 gm ghee in Kadai ( Rajasthani thick Bottom Pan)
5. Gradually add besan with continuously whisking
6. Cook besan well until mixer give cooked aroma and texture.
7. Add little little amount of cold sugar syrup.
8. Cook well and Koya or Mawa with continuously whisking.
9. Pour into flat utensils whole mixer and keep a side for cooling.

Garnishing and Serving
10. Garnish with fine chopped and sliced all dry fruits.
11.  Cut into desire shape and mostly cut into square or rhombus shape and serve two-three pieces.

Some Tips
1. Continuously whisk mixer during cooking prevent stick on bottom of  Kadhai.
2. Shortening well and slowly.
